I discovered But I'm Hungry from Bobbi, the woman who did both of our blog designs. Christina's food makes my mouth water and I'm excited to fill in for her while her family hangs out with her beautiful newborn daughter.
I made her Chiles Rellenos Casserole on Cinco de Mayo and it was outrageously good! Instead of the scrambled egg layer from hers, I added browned chorizo. Into the tomato sauce, I added a hefty shake of dried cumin and chili powder. Lastly, I used jarred pre-roasted peppers because Cinco was on a Monday and on Mondays, I Cannot. I served with fresh cilantro and sliced avocado and have been dreaming about this incredible casserole ever since.
